Sabato is a New York Based Restaurateur and Master Sommelier.  He most recently served as President of bartaco in the US, helping grow the company from 13 to 22 full service restaurants in 13 states that embody the beach culture of South America, Mexico, and Southern California. He was responsible for site selection, development of culture and cuisine, and creating a talent pipeline and systems to support growth of 6-8 restaurants a year.

Prior to that, Sabato was the first ever Chief Restaurant Officer at Union Square Hospitality Group, were he oversaw the opening of nine new concepts and growing the portfolio to 17 restaurants including James Beard award winning Union Square Cafe, Untitled, Union Square Cafe, Marta and Daily Provisions.
